Okay truly this high protein greek yogurt bowl is one of my FAVORITE creations thus far. It’s giving fall with the cinnamon and apples – but tastes like a snickers fluff dessert! It’s a little sweet, a little tart, and packs about 30g of protein which is the bare minimum for what you should be having with each meal to feel satiated and stimulate your body’s natural GLP-1 (glucagon-like peptide-1), improving blood sugar balance and helping you feel fuller for longer after a meal (adding in fiber like apples & dates does this as well). Enjoy!
Ingredients:
- 1 1/4 cup greek yogurt (Painterland Sisters is my absolute favorite- high protein, lactose free, thick consistency)
- 1/2 large Honeycrisp apple, diced (could do Granny Smith or Pink Lady as well)
- 1 tsp Ceylon Cinnamon- *Ceylon is better for your blood sugar than other types of cinnamon*
- 1 date (without the pit) roughly chopped
- 1 tablespoon of creamy peanut butter
- 1 tablespoon of honey
- 1 handful of chocolate chips (I do dark chocolate but milk chocolate works too)
- 1 handful of peanuts (opt for Valencia peanuts, they are typically lower in mold)
- 1/2 a very ripe banana, diced
- (bonus points for a few sprinkles of ground vanilla or 1/2 tsp of vanilla paste)
Instructions:
1. Rinse apple & dice or roughly chop along with date, set aside in a medium size bowl.
2. On top of apple & date add cinnamon and mix until apple pieces are coated.
3. Add remaining ingredients: greek yogurt, peanut butter, chocolate chips, peanuts, banana, and ground vanilla or vanilla paste. Mix until combined. Top with honey and enjoy! You could also add granola for an extra crunch 🙂
