This soup has been living rent-free inside my head ever since we entered the beginnings of fall. The leaves are changing, slowly but surely things are cooling down, and I am SO excited for cozy season. Enjoy this fiber-packed, gut healthy soup with 6 different vegetables + bone broth for an extra protein kick.
Ingredients:
- 7 whole carrots, peeled, trimmed and halved
- 1 medium onion, peeled and halved
- 2 heads of garlic, with the tops removed
- Handful of cherry tomatoes (or 1-2 large Roma tomatoes, halved)
- 2 large zucchini, trimmed and halved
- 2 1/2 tbsp olive oil
- 1 1/2 tbsp Italian herbs (I used a mix of basil, marjoram, savory, sage, & thyme- could do just classic Italian herbs!)
- 1 tsp poultry seasoning
- 1 tsp Trader Joe’s Onion Salt (or any herby garlic/onion salt blend)
- 1/8th tsp cayenne
- 1/4c light whipping cream (could sub 1 c of whole milk, or 1 cup of coconut milk)
- 2 c warmed chicken bone broth
- salt and pepper to taste
- Bonus points for fresh thyme sprinkled in there 😉

Instructions:
- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper, drizzle 1/2 tbsp of olive oil on parchment paper spreading out evenly, set aside.
- Rinse, chop, half, and trim all veggies– veggies should remain in large chunks, with ends cut off, halved and then placed down on parchment sheet, with skin facing upwards.
- Season with herbs, salt and pepper listed above and drizzle 1 tbsp of olive oil on top. Bake in the oven for 30-45 minutes or until veggies get a golden brown and roasted appearance on top.
- While veggies are baking, place bone broth and cream into a pot on the stove and heat until it begins to warm. You could also put your liquids in a microwave-safe container and heat until warm- do NOT boil as these cannot go into the blender boiling hot.
- Once all vegetables are browned on top, place veggies directly into a blender along with more salt and pepper to taste, milk and bone broth mixture, and blend on high until combined.
- Serve immediately alongside some crunchy croutons, sourdough bread, or a cozy grilled cheese sandwich, enjoy!
