Refreshing Watermelon Cucumber & Radish Salad

It’s July in Wisconsin which means things are heating up out here! This week the expected temperature is around 90 degrees and I am relying on this Refreshing Watermelon Cucumber and Radish Salad to cool me down. There’s nothing quite like the crunch and taste of a cucumber/watermelon/cilantro combination topped with fresh lime juice to keep things zesty along with a hint of spice from the radish. This vibrant salad packs in the hydration as watermelon is roughly 92% water by weight and contains electrolytes like potassium and magnesium to prevent dehydration in the summer heat. It also delivers a crunch factor from the radish and antioxidant properties from the cilantro that delivers balanced nutrition in every bite. It is my go-to party salad, especially if we’re hosting because it’s easy and takes all of 15 minutes to throw together. This watermelon cucumber salad stays fresh in the fridge for 3-4 days and pairs perfectly with a burger grill out or bbq moment.

Refreshing Watermelon Cucumber & Radish Salad

Ingredients
  

  • 2 bunches of radishes, finely chopped
  • 1 large pickling cucumber, peeled and diced peel the cucumber in a "stripe" or "zebra" peel pattern, leaving some of the skin on
  • 1/4 large watermelon, cubed or ~ 3 cups
  • 1/4 c cilantro, finely chopped
  • 1/4 c feta cheese crumbles
  • 1 small red onion, finely chopped
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 2-3 limes juiced
  • 1 avocado diced
  • 2 tsp flaky sea salt

Method
 

  1. Rinse all produce. Peel cucumber using a striped pattern (leaving some of the skin on). Once peeled, dice cucumber and place into a large bowl.
  2. Remove rind from watermelon and cube. Place into bowl with cucumber.
  3. Finely chop onion, cilantro and radishes. Remove avocado pit and skin, cube avocado. Place into bowl with cucumber and watermelon. Stir until well combined.
  4. Over top of the salad mixture, drizzle honey, olive oil, squeeze juice of both limes, and top with flaky sea salt. Wait to add dressing until immediately before serving, stir and enjoy!

This recipe was inspired by my want for an Ensalada de Aguacate or the traditional Latin-American avocado salad that typically contains avocado, cilantro, olive oil, vinegar, salt, and lime juice. It’s easy and refreshing without putting in all the extra time, energy and effort it takes to make an extravagant salad. If you love things with a little heat you could add jalapeño or Tajín, tomatoes would also be phenomenal in this! I hope you enjoy and let me know if you give it a try in the comments!
