Zesty Bean Salad

I love me a dense bean salad! 🥗 This one was whipped up in all of 5 minutes, recipe below. Quick lil tip- if you have any hormonal imbalance including things like beans (legumes) 🫘 into your diet will help to excrete excess hormones like testosterone and estrogen. So if you’re a PCOS girly or someone with an overproduction of testosterone – this would help! The key is to having about half a cup of legumes daily and you want to make sure if you purchase them dried that you pre-soak before cooking to eliminate as many lectins as possible while improving digestibility. They also help you feel full longer and provide your gut with beneficial bacteria for a healthy microbiome 🦠.

Ingredients


-6 mini bell peppers 🫑 diced (could also do some cucumbers!)
-1 can of great northern beans, rinsed 🫘 
-about 2-3 tbsp of extra virgin olive oil 🫒 (add more to taste)
-salt and pepper to taste
-a few dashes of dried basil 🌿 & an herby onion 🧅 salt mixture (I use Onion Salt from Trader Joe’s)
-sprinkle of garlic powder 
-8 green olives 🫒 diced + about 2-3 tbsp of the olive juice (could also use caper juice, pickle jar juice, etc instead)
-a few green onions finely diced
-3 spoonfuls of pickled red onion 🧅 (could use fresh as well or even shallots)
-sprinkle of feta cheese (did not put this in mine shown above but I think it would be so good) 🧀 
-1 tbsp of fresh dill, finely chopped
-1 tbsp + extra of red wine vinegar to taste

Mix all until well combined and enjoy! Lasts for 3-4 days in the fridge 🙂
