The Best Lactose-Free Dilly Cottage Cheese Dip

 

This lactose-free dilly cottage cheese dip is a staple in my house because it’s an easy, high protein snack you can make on the go that packs a flavorful punch. You can buy whatever cottage cheese you’d like, but for my lactose intolerant friends- Good Culture cottage cheese is lactose-free and tastes great.

Ingredients:

o   3/4 c cottage cheese

o   1/2 lemon juiced

o   olive oil to taste

o   salt & pepper to taste

o   1 tsp Onion Salt- this specific blend is from Trader Joe’s however any onion/garlic salt blend will do!

o   1-2 tsp dried dill

o   1-2 tsp dried parsley

o   4 fresh chives rinsed and diced

o   1/3 c cucumber rinsed and diced

o   2 radishes rinsed and diced


Instructions:

1.    In a medium bowl combine the cottage cheese, salt, pepper, 1 tsp of dill, 1 tsp of parsley, onion salt and a drizzle of olive oil. Olive oil gives the cottage cheese a creamy texture, but too much and it can overpower things. A small drizzle is all it takes

2.    Once combined, spread the cottage cheese mixture onto your favorite serving plate. I typically use a small, round serving plate. The goal is to have the cottage cheese evenly spread over the plate, but not too thin as you’ll want to have enough in each bite to dip it in chips, veggies, etc.

3.    Next, sprinkle on top cumber, radish, dill and parsley (enough to cover everything, about 1 tsp each), chives, salt and pepper to taste, lemon juice, and a drizzle of olive oil.

4.    Use a yummy chip or sliced veggie and dip away! I prefer a plain potato chip or a bell pepper slice.
